
Feel the heat of summer, feel like getting something cold and refreshing to eat, without worrying about gaining fat but want to fill your tummy. Then i would recommend having seasoned acorn jelly from Korea.
What is Acorn Jelly?
Remember Ice Age, there’s a character call Scrat – whom is obsess with a nut. That is an Acorn.
Acorn is collected from the ground after it falls off the Oak Tree. Then produce and sell in the form of acorn starch/ jelly powder/ flour. The jelly is then form with a mixture of flour and water.
What does Acorn jelly taste like?
A slight distinct nutty flavor but there is no taste on it own, so need to eat it with seasoning. It is jelly liked, in term of texture… more close to soft tofu, but slightly firmer.
Personal Comment:
My recipe is slightly revise to my own preference as I would like to have my acorn jelly to have a firm texture, instead of melting in my mouth after biting.
My seasoning is more towards sweet, fragrance, slight spices and crunch texture from the chili flake, garlic and sesame seed. Prefer to use honey, since it healthier than sugar and also helps to cover the salty, soy bean smell from the soy sauce.

Acorn Jelly
[My prefer ratio flour to water – 1:2]
- 100g acorn jelly powder (I got it at a korean store or you can buy at amazon website)
- 200g water [ if you prefer a melt in your mouth texture, change to 300g]
- Pinch of salt
- 1 teaspoon oil [for greasing purpose]
Seasoning
[My prefer ratio soy sauce, honey, sesame oil = 1:1:1]
- 2 tablespoon light soy sauce
- 2 tablespoon honey (or 3 tablespoon sugar)
- 2 tablespoon sesame oil
- 2 tablespoon korean chili flake (you may add as much to your liking)
- 2 tablespoon roasted sesame seed
- 1-2 clove garlic, chopped to small pieces
- Optional : add chopped parley / spring onion
Add on:
You may add on with any vegetable/ salad to eat with the acorn jelly.
- Lettuce [preferred]
- Slice Cucumber
- Tomatoes
- Slice Onion
- Slice Carrot

Preparing the Acorn Jelly :
- Find a glass container middle size will do. Grease the container with oil.
- Note: To avoid the jelly from sticking to the container making it order to remove from the container.
- Boil the acorn flour and water in a pot under medium heat. Stir slowly till dissolve.
- Note: The acorn flour will not dissolve under cold water.
- When the acorn mixture become thicken, switch to low heat. Stir constantly for 10 min.
- Note: Do not stop stirring or else it will stick to your pot and burn. which makes it harder to wash your pot.
- After 10 min of stirring. Switch off the heat. Pour it to the container. Let the mixture cool down first before putting into the fringe.
- Around 2-3 hr the jelly will be ready, but i would recommend fringe it overnight to ensure it stay firm and ready.
- For this proportion, you can eat for at least 3 to 4 serving.
Seasoning and platting time.
- Mix all seasoning ingredient in a bowl.
- Get your jelly out of your fringe. Cut the amount you want to eat.
- Cut the jelly into 1-2 cm thickness slice, depending on what shape you want your jelly. For me i cut it into rectangle slice.
- Platting time! Layer your lettuce, vegetable, salad onto a plate. Place your jelly slices on top and pour your seasoning on top of the jelly.
- And done, ready to eat! Enjoy.
